21 Day Fix Snickerdoodle Smoothie

Hands down one of my favorite cookies of all times is the Snickerdoodle, especially fresh out of the oven when they are still soft.  Sadly the sugar, butter, and flour don’t quite fit into the healthy lifestyle and 21 Day Fix Meal plan.  So I created a 21 Day Fix Extreme meal plan approved version to satisfy my sweet tooth and keep me on track.  The best part it is made with Shakeology so I know that I am getting the best possible nutrition in one glass and I don’t have to stress about it throwing my blood sugar all out of whack.

This is the perfect post workout smoothie to help with muscle recovery and it tastes amazing!!

Crazy Easy Almond Butter

As a family we made the switch to Almond Butter a while ago but I had treated the delicious and nutritious treat like it is pure gold.  Honestly, I would sneak it when the kids were not watching because I didn’t want to have to share the teeny tiny amount that we had that cost us a week’s salary to purchase.  Ok so I know I am being dramatic but I really did secretly eat the stuff because I didn’t want to share.

My favorite almond butter was always the fresh ground we would get at Whole Paycheck, ahum I mean Whole Foods.  You could seriously taste the freshness and for that reason we paid $7/lb for the buttery gold.  I don’t know if I got sick of giving up other foods so I could afford to feed my almond butter habit or if I finally decided to not be so stubborn and share my almond butter with the kids.  Either way I knew if that little machine at Whole Foods was all that was in between me and almond butter I surely could manage to find a way to make it at home.  Enter my awesome KitchenAid Food Processor!

Now if you put Almond Butter on the delicious pedestal like I do you are going to have a Homer Simpson “Doh” moment when I show you how simple it is to make at home.

First gather either raw or roasted almonds, I prefer to buy raw then roast them a few hours prior to making my almond butter. Just pop 2 cups raw almonds into an oven at 300 for 10 minutes.  Let them cool down before you start making magic happen

2 Cups Fresh Roasted Almonds
2 Cups Fresh Roasted Almonds

Next you need a heavy-duty food processor or blender.  I prefer my food processor because it is easy to use, has a powerful motor that has yet to overheat, and get’s the job done in less than 10 minutes.

Add you almonds with your sharpest blade and turn on.  It will be loud at first, but that only lasts a few moments as the almonds start to break down.

As the almonds start to break down they will start to stick to the sides.  Just scrape it down every minute or so and keep pressing on…

Scrape down the sides

Keep Going....
Keep Going….

The oils in the almonds will start to be released as the friction heats up the almonds and they are broken down.  It will start to ball up into a dough, don’t stop yet!  Break it down and keep going….

Keep Going....
Keep Going….

At about 8 minutes of processing you get a smooth and creamy Almond Butter to rival that from Whole Foods magic machine2015-03-05 12.11.35

Place in a small container and store in your fridge or pantry for a week or two, if it lasts that long.

You can now enjoy delicious and nutrition buttery Almond gold at home.  Add it to greek yogurt, your smoothies, top apple slices, or eat it straight of the spoon if you want.   I have found the best place to get almonds is Costco, online, or Winco.  Enjoy!!

Baked Chicken Wins with the Kiddos!

Tonight I decided I was going to try to make some chicken that I could pass off as chicken fingers on my toddlers.

I have a 2 year old that will devour anything out in front of her and then I have a 3 year old that decide a few moths back that unless it was in a fried or breaded form she wasn’t eating any meat. So while trying eat healthy as a family this ha been a bit of a challenge. Tonight mommy gets a tic in the Win column!!

We are preparing to do a Whole 30 as a family as well so I thought I better start transitioning into more wholesome options that are kid approved.

I mixed in a food processor

1/4 cup flax seed meal
1/4 cup coconut flour
1oz cashews
2 Tbsp chia seed
1 Tbsp Mrs Dash Salt free seasoning (I would have adde more but I ran out)

Sliced chicken breast into thin strips and coated in the “no bread” coating.

Place the chicken strips on a sheet pan with a small amount of olive oil sprayed on to prevent sticking

Bake at 375 until fully cooked through. It was about 20 min for mine but the thickness of the chicken strips will determine how long it is needed.

Voila! Kiddo approved baked chicken fingers😃

21 Day Fix Weight Loss Solution

Nutrition is the hardest part for everyone.

What is the 21 Day Fix?

The 21 Day Fix program takes the guesswork out of weight loss. It’s a unique portion-control system combined with easy-to-follow workouts that fit into anyone’s busy schedule. The Weight Loss Solution

“Fill It and Eat It“

21 day fix image containers

With this unique nutrition plan you can eliminate counting calories, carbs and points.   Simply fill these food storage containers.  When your food is gone you are done.  If you have food left over you save it for the next day.

We know even the healthiest of eaters have issues with unwanted weight. Because the quality of food we eat will positively affect our health.   But the quantity of food, regardless of how healthy it may be for us, can negatively affect our weight if we eat too much of it.

The 21 Day Fix uses specifically portioned food storage containers that eliminate the guesswork from portion control. You design your Color Coded Food Plan based on your needs. Your 21 Day Fix Kit includes these color coded portion control food storage containers.    If it fits in the container, you can eat it. And you’ll lose weight. When eaten in the right quantities, there are no foods that are off limits.

Treats (like dessert & Wine) are incorporated into the plan. So there are literally no foods that are off limits.

The Workouts

The 21 Day Fix comes with a complete workout program.  Each workout is just 3o minutes long. There is a 7 day workout program…..so every day is different. Workouts include upper body work, legs, cardio, cardio with weights, pilates and even yoga.  So there is something for every single day to help keep your body from plateauing.    Fitness levels range from Beginner level (with a modifier) to the advance level or more intense exercise level.   During the last week of the program you will be doubling up your workouts.

Keep in mind this is not just a workout program.  You can work yourself into the ground fitness wise but if you do not learn to portion control your food you can blow all that hard work in just one meal.

My Journey

Ultimate Reset week 2 review

Week 2 or the Detox week was so far the best! The food continues to be amazing and a great mix of variety and fresh flavors. Some of my favorites from the week were the Corn & Edamame succotash, and the Hearty Miso Soup.

My week 2 final weight loss is 11lbs!! My hubby is at 15lbs!! I am still in complete shock! I guess I really had some stored up toxins and pollutants in my system. I am even more shocked that I have been eating a lot of  food and dropping the weight. I have scheduled to get a bod pod body fat percentage measure done after I completed week 3. I am planning to start a routine of two a days to gain some muscle mass and I want to make sure I am properly fueling my system for muscle making.

I was worried that the detox week was going to be painful. I have heard from other challengers that they get sick or feel rundown during week 2 because that is when the greatest flush of toxin happens. I feel blessed that I didnt experience any of that.  I noticed a boost in my energy though, I actually had a surge of energy every day and sometimes felt it difficult to fall asleep. I was also energized every morning, which is unheard of for me, I am not a morning. person.

Excited for this week because this is Restore week where we are pumping all the good vitamins and prebiotics back into our system. And the awesome food continues!

My Journey

Ultimate Reset “Preset”

Today we went shopping to pick up our massively awesome grocery list filled with wonderful produce and a few pantry stocking essentials.  I must admit we did let the fridge run down to bare bones because I knew we were going to be starting the reset next week.  But we completely packed it back with veggies and fruit (cucumber, spinach, kale, romaine, peppers, corn, tomatoes, potatoes, onions, carrots, basil, parsley, cilantro, lemons, limes, blueberries, green beans), fish, chicken, tempeh and some yogurt all for under $200!!!  That’s right we completely restocked our fridge and pantry for under $200, including a few pantry essentials (rice vinegar & wakame) we needed to pick up at Whole Foods.

I have started prepping and chopping and pre-cooking as much as possible so our meals are easily thrown together next week and the following.   The meal plan and recipes are super easy to follow, I just want to remove as much of the work as possible.   On the stove as we speak is short grain brown rice (for rice & beans as well as sushi), garbanzo beans for hummus, and lentils for a super yummy sounding cold lentil salad.

I also already prepped these three amazing dressings

Creamy Garlic, Basic Vinagrette w/Basil, and Miso Sesame Ginger (my favorite!)

Next I move on to vegetable cutting!
