Tonight I decided I was going to try to make some chicken that I could pass off as chicken fingers on my toddlers.
I have a 2 year old that will devour anything out in front of her and then I have a 3 year old that decide a few moths back that unless it was in a fried or breaded form she wasn’t eating any meat. So while trying eat healthy as a family this ha been a bit of a challenge. Tonight mommy gets a tic in the Win column!!
We are preparing to do a Whole 30 as a family as well so I thought I better start transitioning into more wholesome options that are kid approved.
I mixed in a food processor
1/4 cup flax seed meal
1/4 cup coconut flour
1oz cashews
2 Tbsp chia seed
1 Tbsp Mrs Dash Salt free seasoning (I would have adde more but I ran out)
Sliced chicken breast into thin strips and coated in the “no bread” coating.
Place the chicken strips on a sheet pan with a small amount of olive oil sprayed on to prevent sticking
Bake at 375 until fully cooked through. It was about 20 min for mine but the thickness of the chicken strips will determine how long it is needed.
Last June I had the opportunity to meet my mentor and fitness celebrity Tony Horton and do a live workout with him from his newest program P90 that releases Sept 23rd.

Week 2 or the Detox week was so far the best! The food continues to be amazing and a great mix of variety and fresh flavors. Some of my favorites from the week were the Corn & Edamame succotash, and the Hearty Miso Soup.
My week 2 final weight loss is 11lbs!! My hubby is at 15lbs!! I am still in complete shock! I guess I really had some stored up toxins and pollutants in my system. I am even more shocked that I have been eating a lot of food and dropping the weight. I have scheduled to get a bod pod body fat percentage measure done after I completed week 3. I am planning to start a routine of two a days to gain some muscle mass and I want to make sure I am properly fueling my system for muscle making.
I was worried that the detox week was going to be painful. I have heard from other challengers that they get sick or feel rundown during week 2 because that is when the greatest flush of toxin happens. I feel blessed that I didnt experience any of that. I noticed a boost in my energy though, I actually had a surge of energy every day and sometimes felt it difficult to fall asleep. I was also energized every morning, which is unheard of for me, I am not a morning. person.
Excited for this week because this is Restore week where we are pumping all the good vitamins and prebiotics back into our system. And the awesome food continues!
As the temperatures start to heat up outside check out these amazingly simple and super yummy sweet treats that are a great alternative to trips to the ice cream truck.
These strawberry-banana flavored frozen yogurt cupcakes are a perfect sweet treat and less than 100 calories each!
Total Time: 4 hrs. 20 min.
Prep Time: 10 min.
Cooking Time: None
Yield: 12 servings, 1 cupcake each
Ingredients:
3½ cups nonfat plain Greek yogurt
2 Tbsp. raw honey
6 medium strawberries, pureed
½ medium ripe banana, pureed
36 dark chocolate morsels (about 2 Tbsp.)
Preparation:
1. Place 12 silicone baking cups on a baking sheet. Set aside.
2. Combine yogurt and honey in a medium bowl; mix well.
3. Place 3 Tbsp. yogurt mixture in each baking cup.
4. Top evenly with strawberries, banana, and 2 additional Tbsp. yogurt mixture.
5. Top each cupcake with 3 morsels.
6. Freeze for 4 hours, or until firm.
7. Remove from freezer 10 minutes before serving.
Tip: You can make this recipe using silicone baking cups, a silicone muffin pan, or a regular muffin pan. When using the regular muffin pan, to remove cupcakes, dip the bottom of the pan in hot water for 20 seconds.
Day 5 has been a challenge, not going to lie. But not because of the reset, I actually feel amazing. The food continues to be phenomenal. The quinoa salad was BOMB! It had been a challenge because I am visiting family and I am being faced with some wickedly awesome unhealthy food choices.
When I am at home I can much more easily controll the temptations, I simply throw them away. I don’t think my family would appreciate me emptying their cupboards and pantries.
The second major temptation has been caffeine. I am well aware of my weakness for coffee, and that is not easily avoided in Seattle! You seriously cannot go 1/2 a mile without seeing a Starbucks, drive up stand, or now bikini barista.
The biggest challenge and test of will power will come tomorrow. I will be baking and decorating cupcakes for my sisters baby shower. I am a HUGE fan of cupcakes!! If you believe in prayer please pray for me!
