I Maxed Out!

Yay!! It showed up and we couldn’t wait. My hubby and I popped in the Cardio Challenge today.  It is essentially the fitness challenge or fitness test to check out your starting point and track your progress.

Verdict: this is going to get me to goal quicker than I thought! It was fun and fast!  I really love how the sequences are set up.  I also really appreciated the on screen modifier view.  I have some bad knees and the lower impact (not lower intesnity) options was a must. It was awesome!!  I have honestly never sweat so much in just 30 minutes!  From the start to when my heart rate got back down to in resting range I had burned through 495 calories.  Crazy right?! 

I think the part that impressed me the most was the nutrition plan that comes with it.  It is awesome and gives you great guides for eating in Fast Food chains, on the go, and has an easy to follow plan.  I am LOVING Insanity Max :30.  Today’s test was brutal but I am super excited to push forward with my accountability group.

Last June I had the opportunity to meet my mentor and fitness celebrity Tony Horton and do a live workout with him from his newest program P90 that releases Sept 23rd.

PiYo is Coming! PiYo is Coming! 

I am super excited that I will be getting certified to lead PiYo classes and I am CRAZY excited that this new in home program will be available to everyone next week!!

So What is PiYo?

PiYo is the latest workout from Superstar Fitness Trainer Chalene Johnson who has previously brought us Turbo Jam, Turbo Fire, and ChaLean Extreme.  PiYo is different than any other workout out there right now.  It is a low impact workout that delivers high intensity results!!  This 60 Day program delivers the muscle- sculpting and core-toning of Pilates combined with the flexibility and strengthening of Yoga.

Ultimate Reset week 2 review

Week 2 or the Detox week was so far the best! The food continues to be amazing and a great mix of variety and fresh flavors. Some of my favorites from the week were the Corn & Edamame succotash, and the Hearty Miso Soup.

My week 2 final weight loss is 11lbs!! My hubby is at 15lbs!! I am still in complete shock! I guess I really had some stored up toxins and pollutants in my system. I am even more shocked that I have been eating a lot of  food and dropping the weight. I have scheduled to get a bod pod body fat percentage measure done after I completed week 3. I am planning to start a routine of two a days to gain some muscle mass and I want to make sure I am properly fueling my system for muscle making.

I was worried that the detox week was going to be painful. I have heard from other challengers that they get sick or feel rundown during week 2 because that is when the greatest flush of toxin happens. I feel blessed that I didnt experience any of that.  I noticed a boost in my energy though, I actually had a surge of energy every day and sometimes felt it difficult to fall asleep. I was also energized every morning, which is unheard of for me, I am not a morning. person.

Excited for this week because this is Restore week where we are pumping all the good vitamins and prebiotics back into our system. And the awesome food continues!

Recipes

Frozen yogurt freezer bites- Perfect Summer treat!!


As the temperatures start to heat up outside check out these amazingly simple and super yummy sweet treats that are a great alternative to trips to the ice cream truck.

These strawberry-banana flavored frozen yogurt cupcakes are a perfect sweet treat and less than 100 calories each!Frozen Yogurt Bites

Total Time: 4 hrs. 20 min.
Prep Time: 10 min.
Cooking Time: None
Yield: 12 servings, 1 cupcake each

 

 

 

Ingredients:
3½ cups nonfat plain Greek yogurt
2 Tbsp. raw honey
6 medium strawberries, pureed
½ medium ripe banana, pureed
36 dark chocolate morsels (about 2 Tbsp.)

Preparation:
1. Place 12 silicone baking cups on a baking sheet. Set aside.
2. Combine yogurt and honey in a medium bowl; mix well.
3. Place 3 Tbsp. yogurt mixture in each baking cup.
4. Top evenly with strawberries, banana, and 2 additional Tbsp. yogurt mixture.
5. Top each cupcake with 3 morsels.
6. Freeze for 4 hours, or until firm.
7. Remove from freezer 10 minutes before serving.

Tip: You can make this recipe using silicone baking cups, a silicone muffin pan, or a regular muffin pan. When using the regular muffin pan, to remove cupcakes, dip the bottom of the pan in hot water for 20 seconds.

Ultimate Reset “Preset”

Today we went shopping to pick up our massively awesome grocery list filled with wonderful produce and a few pantry stocking essentials.  I must admit we did let the fridge run down to bare bones because I knew we were going to be starting the reset next week.  But we completely packed it back with veggies and fruit (cucumber, spinach, kale, romaine, peppers, corn, tomatoes, potatoes, onions, carrots, basil, parsley, cilantro, lemons, limes, blueberries, green beans), fish, chicken, tempeh and some yogurt all for under $200!!!  That’s right we completely restocked our fridge and pantry for under $200, including a few pantry essentials (rice vinegar & wakame) we needed to pick up at Whole Foods.

I have started prepping and chopping and pre-cooking as much as possible so our meals are easily thrown together next week and the following.   The meal plan and recipes are super easy to follow, I just want to remove as much of the work as possible.   On the stove as we speak is short grain brown rice (for rice & beans as well as sushi), garbanzo beans for hummus, and lentils for a super yummy sounding cold lentil salad.

Creamy Garlic, Basic Vinagrette w/Basil, and Miso Sesame Ginger (my favorite!)

Clean Eating Phad Thai with Veggie Noodles

For Mother’s Day I purchased myself this awesome little veggie sprializer Image at Bed Bath & Beyond, best $15 spent on a kitchen tool!!

Tonight I made this amazing Phad Thai style dish.  It was:

1 carrot spiralized

1 green zucchini squash spiralized

1 yellow zucchini squash spiralized (don’t think that is a word, but I just made it one)

1 package extra firm organic non-GMO tofu Grilled with a little sesame oil

1 tbsp minced garlic

A little rice vinegar, grated ginger root, 2 tbsp peanut butter and sesame oil to top it off.

I added some heat to mine with some dried thai chilis at the end.  It was so awesome even my girls loved it!!I will definitely make this again and get more precise measurements so I can add the nutritional content.
